Flavor of Fall-Pumpkin

This is my recipe for pumpkin bread.  It makes 3 loaves at a time and OK Chick told me to post it so she could get the recipe.

3 cups sugar

1 cup salad oil

4 eggs

2 t. vanilla

3 1/2 cups flour

2 t. soda

2-3 t. salt

1 t. baking powder

1 t. cinnamon

2 t. pumpkin pie spice

2/3 cup water

2 cups pumpkin

-Combine sugar and oil in a large bowl.  Add eggs one at a time, beating after each addition.  Add vanilla.

-Sift dry ingredients together.  Set aside.

-Add dry ingredients alternately with water.  Add pumpkin.

-Pour in to 3 well-greased and floured 9x5x3″ loaf pans.

-Bake in preheated 325 degree oven for 1 hour, or until tests done.

-Remove from pans when barely warm.


-18 min. for muffins

-Makes 8, mini loafs.  Bake for 35 min.

-Add 2 cups cranberries and 1/2 t. almond extract.

-Serve with your favorite cream cheese frosting, which the original recipe calls for, but I have never done. 

-Make cream cheese filling and layer in the batter before baking.

2(3oz) cream cheese, softened

1/3 cup sugar

1 egg

1 T. flour

Beat together cream cheese, sugar, and flour.  Add egg and mix well.

    I’m glad you posted this b/c I don’t have a recipe for it and I was just telling a friend last week that I need to find one. I also like that it makes 3 loaves 🙂

    So do you put in a little batter, then a little cream cheese, and layer until it’s full? Sounds interesting! I make a pumpkin roll, but this sounds easier and delicious!

    I fill the pan half full of batter, put in a layer of cream cheese and then fill up with batter again.
